Blender Paleo Chocolate Macaroons
Easy. Basic ingredients. Delicious.
Using your laziness (or lack of desire to do anything non-essential) to your utmost benefit. I like to have treats every once in a while, but I don't like them to be too sweet, I enjoy it if there are health benefits, and I want to know exactly what's in it. These requirements can make it difficult to eat something at a coffee shop - too sweet, too many ingredients, weird taste...some things are better homemade. (I realize I sound like Goldilocks).
The Recipe (everything goes in your blender or food processor):
3/4-1 cup unsweetened shredded coconut (If you only have coconut ribbons, put these in the blender first and whiz them until they're finely chopped)
1/4 cup coconut oil (if you don't feel like melting it, don't worry, I have a trick to help you - just plop it in your blender*)
2-3 Tbsp cocoa or cacao (processed or raw - your preference entirely)
1-2 Tbsp maple syrup or honey
1 tsp vanilla
1/4 tsp himalayan salt
Method:
Blend it until it's all combined into a big chocolatey delicious batter. Place by the teaspoon full onto a parchment paper-lined baking sheet. Put the baking sheet in the freezer for 5-7 minutes to harden.
Eat.
You end up with a high fibre, low glycemic, gluten-free, dairy-free sweeet and satiating snack.
*This isn't really a trick. If you don't want to pre-melt your coconut oil, boil water and while everything is blending, pour about 1/4 cup of boiling water in the blender - just enough to melt the coconut oil.
